Ingredients list for Cinnamon Raisin Bran Muffins

  • 1/2 teaspoon Cinnamon Powder
  • 2/3 cup Raisins
  • 1 cup Wheat bran
  • 1 cup Whole wheat flour (atta)
  • 1 teaspoon Baking powder
  • 1 teaspoon Soda bicarbonate
  • 3/4 cup Brown sugar
  • 135 grams Butter
  • 1 Egg
  • 1 1/4 cups Buttermilk
  • to grease Oil

Method

  1. Preheat oven to 180°C/ 350°F/ Gas Mark 4. Grease muffin moulds. Sift whole wheat flour with baking powder and soda bicarbonate into a bowl. Add wheat bran and mix. In another bowl melt butter in the microwave.
  2. Break egg and whisk well Mix together melted butter, brown sugar and raisins well. Add whisked egg and mix. Add the flour mixture and cinnamon powder mix well. Add buttermilk and mix again.
  3. Transfer the mixture into the greased muffin moulds till two thirds full and bake in the preheated oven for twenty to twenty five minutes. Let it cool slightly before de-moulding.
