Ingredients list for Chipotle Chicken Tenders with Pineapple and Mango
- 8-12 Chicken supreme
- 3 tablespoons Chipotle in adobo sauce
- to taste Salt
- 1 tablespoon Lemon juice
- 1 tablespoon Fresh coriander leaves chopped
- for grilli Oil
- to serve Iceberg lettuce
- to serve Lemon wedge
- Pineapple and mango salsa
- 1 cup Pineapple finely chopped
- 3/4 cup Mango puree
- 2 medium Tomatoes finely chopped
- 1 1/2 tablespoons Fresh coriander leaves chopped
- to taste Salt
- 1 teaspoon Lemon juice
- 1 tablespoon White onion chopped
- 1 tablespoon Pickled jalapenos chopped
Method
- Take chicken in a bowl. Add chipotle sauce, salt, lemon juice and chopped coriander and mix well. Refrigerate to marinate for 30 minutes.
- To make salsa, combine tomato, pineapple, 1 tablespoon chopped coriander, salt, lemon juice, onion, jalapenos and mango puree in a bowl and mix well. Add remaining chopped coriander and mix well. Refrigerate till chilled.
- Skewer the marinated chicken onto satay sticks.
- Heat some oil in a non-stick grill pan. Place skewers on it and grill till evenly done from both sides.
- Roughly chop lettuce and place on serving plate. Put the chicken skewers on top, top with salsa and serve immediately with lemon wedge.
