Ingredients list for Chicken with Ginger Pineapple Sauce
- 2 Boneless Chicken Breasts halved
- 1/2 cup Pineapple chopped
- 1 Ginger grated
- 2 cups Pineapple juice
- to taste Salt
- to taste Black pepper powder
- A few saffron strands
- Oil for grilling
- for garnishing Ginger strips
Method
- Mix chicken breasts with salt and pepper powder and set aside to marinate for ten to fifteen minutes.
- Heat a non-stick pan, add ginger and roast for a minute. Add pineapple, pineapple juice and saffron, mix well and cook till the moisture reduces slightly.
- Add salt and black pepper powder and mix well. Switch off heat, cool and grind it to a smooth puree.
- Heat some oil in a non-stick grill pan. Place marinated chicken on it and grill, turning sides, till chicken is cooked and evenly done on both sides.
- Place grilled chicken on a serving plate and pour prepared sauce over. Garnish with ginger strips and serve immediately.
