By Sanjeev Kapoor 08 Nov 2016 in Recipes Course New Update Main Ingredients Processed cheese, Potatoes Cuisine British Course Snacks and Starters Prep Time 16-20 minutes Cook time 31-40 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Cheesy Jacket Potatoes as required Processed cheese 4 medium Potatoes medium 3 tablespoons Butter 2-3 Spring onion bulbs chopped 1/2 cup Corn kernels to taste Crushed black peppercorns to taste Salt 2 tablespoons Refined flour (maida) 1 cup Milk for garnishing Spring onion greens Chopped Method Preheat oven at 180ºC. Halve the potatoes. Scoop out the flesh and reserve alongwith the shells. Heat 1 tablespoon butter in a non-stick pan. Add spring onion bulbs and corn kernels and mix well. Add crushed peppercorns and salt, mix and cook for a minute. Add the reserved potato flesh and crushed peppercorns and mix well. Remove from heat. To prepare white sauce, heat remaining butter in a non-stick pan. Add flour, mix and cook for a minute. Switch off the heat, add milk and mix well. Turn on the heat and sauté for 5-7 minutes. Add crushed peppercorns and salt, mix and cook for a minute. Switch off heat and set aside. Add the prepared white sauce to the prepared potato mixture and mix well. Place the potato shells on a baking tray.Fill each with the prepared potato-white sauce mixture. Grate some cheese over each potato jacket. Put the baking tray in preheated oven and bake for 10-14 minutes. Serve hot garnished with spring onion greens.
