Preheat oven to 200°C. Place bread slices on baking tray. Brush with oil and place in oven bake for 2-3 minutes.
Mix olives, processed cheese, grated mozzarella cheese, mozzarella cheese cubes, green olives and parsley in a bowl.
Remove tray from oven. Flip slices and spread a spoonful of cheese-olive mixture evenly on 4 slices. Cover with remaining slices and place tray again in oven, bake till cheese melts and bread is crisp and golden. Cut into rectangles and serve immediately.
