Cheese Crusted Chicken with Salad Recipe - How to make Cheese Crusted Chicken with Salad


Prep Time : 16-20 minutes

Cook time : 26-30 minutes

  • Boneless chicken breasts 2

  • Grated processed cheese 4 tablespoons

  • Mayonnaise 2 tablespoons

  • Garlic cloves 2

  • Oil for greasi

  • Salad

  • Button mushrooms 8-9

  • Fresh parsley sprigs 7-8

  • Fresh coriander sprigs 8-10

  • Juice of 1 lemon

  • Salt to taste

  • Green chilli sauce 1 tablespoon

  • Mixed salad leaves (Iceberg lettuce, lollo rosso lettuce) 6-7

  • Crushed black peppercorns to taste

  • Extra virgin olive oil 2 tablespoon


Step 1

Preheat oven at 180ºC.

Step 2

To make salad, slice mushrooms and place in a bowl.

Step 3

Roughly chop parsley sprigs and add. Roughly chop coriander sprigs and add alongwith lemon juice, salt and chilli sauce and mix well. Refrigerate till chilled.

Step 4

Make incisions on chicken breasts and spread 1 tbsp mayonnaise on each.

Step 5

Roughly chop garlic cloves and divide equally onto each breast.

Step 6

Grease a baking dish with oil and place chicken breasts on it. Top each with 2 tbsps cheese, press lightly, put the dish in the preheated oven and bake for 20-25 minutes.

Step 7

Tear salad leaves and add to the chilled salad bowl. Toss well. Add crushed peppercorns and olive oil and toss again.

Step 8

Prepare a bed of salad on a serving dish. Put the chicken on top and serve immediately.
