Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Cauliflower Garlic Sticks Recipe

  • Cauliflower grated 1 small

  • Garlic chopped 1 tablespoon

  • Butter for greasing

  • Refined flour (maida) for dusting

  • Salt to taste

  • Olive oil 1 tablespoon

  • Egg beaten 1

  • Mozzarella cheese grated ½ cup + 2 tablespoons

  • Mixed herbs ½ teaspoon

  • Green chillies chopped 2

  • Bread crumbs dried ½ cup

  • Fresh coriander leaves chopped 2 tablespoons

  • Crushed black peppercorns to taste

Method

Step 1

Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.

Step 2

Mix together cauliflower and salt in a bowl. Set aside.

Step 3

Heat olive oil in a non-stick pan. Add garlic and sauté for ½ minute. Remove from heat and set aside.

Step 4

Squeeze out the excess water from cauliflower and place in another bowl. Add sautéed garlic, egg, cheese, dried herbs, green chillies, ⅓ cup breadcrumbs, 1 tablespoon coriander leaves and crushed peppercorns and mix well. Adjust salt.

Step 5

Mix together remaining cheese, remaining coriander leaves and remaining breadcrumbs in a bowl.

Step 6

Spread cauliflower mixture in the prepared loaf tin. Place the tin in the preheated oven and bake for till golden brown from top. Flip and bake again till golden brown on the other side as well.

Step 7

Sprinkle the prepared cheese mixture on top and bake once again till the cheese melts. Remove from heat, cool and cut into sticks.

Step 8

Serve.
