Ingredients list for Cajun Rice

  • 2 cups Rice cooked
  • 1/2 cup Red Kidney Beans boiled and drained
  • 2 tablespoons Oil
  • 1 large Onion chopped
  • 2 medium Tomatoes chopped
  • 1 medium Green capsicum chopped
  • to taste Salt
  • 1 tablespoon Lemon juice
  • FOR CAJUN SPICE MIX
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Crushed red chillies
  • 2 teaspoons Mixed herbs dried

Method

  1. Mix together all the ingredients for the Cajun spice mix.
  2. Heat the oil in a deep pan; add the onion and sauté till translucent.
  3. Add the tomatoes and capsicum and sauté for two minutes.
  4. Add the Cajun spice mix and boiled kidney beans and mix well.
  5. Stir in the rice, salt and lemon juice.
  6. Cook till the rice is heated through.
  7. Serve hot.
