In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients

  • Rice cooked2 cups

  • Red kidney beans (rajma) soaked boiled and drained1/2 cup

  • Oil 2 tablespoons

  • Onion chopped1 large

  • Tomatoes chopped2 medium

  • Green capsicum chopped1 medium

  • Salt to taste

  • Lemon juice 1 tablespoon

  • FOR CAJUN SPICE MIX

  • Red chilli powder 1 teaspoon

  • Crushed red chillies 1 teaspoon

  • Mixed herbs dried2 teaspoons

Method

Step 1

Mix together all the ingredients for the Cajun spice mix.

Step 2

Heat the oil in a deep pan; add the onion and sauté till translucent.

Step 3

Add the tomatoes and capsicum and sauté for two minutes.

Step 4

Add the Cajun spice mix and boiled kidney beans and mix well.

Step 5

Stir in the rice, salt and lemon juice.

Step 6

Cook till the rice is heated through.

Step 7

Serve hot.
