Ingredients list for Cajun Rice
- 2 cups Rice cooked
- 1/2 cup Red Kidney Beans boiled and drained
- 2 tablespoons Oil
- 1 large Onion chopped
- 2 medium Tomatoes chopped
- 1 medium Green capsicum chopped
- to taste Salt
- 1 tablespoon Lemon juice
- FOR CAJUN SPICE MIX
- 1 teaspoon Red chilli powder
- 1 teaspoon Crushed red chillies
- 2 teaspoons Mixed herbs dried
Method
- Mix together all the ingredients for the Cajun spice mix.
- Heat the oil in a deep pan; add the onion and sauté till translucent.
- Add the tomatoes and capsicum and sauté for two minutes.
- Add the Cajun spice mix and boiled kidney beans and mix well.
- Stir in the rice, salt and lemon juice.
- Cook till the rice is heated through.
- Serve hot.
