Ingredients for Brown Bread Ice Cream Recipe

  • Brown bread slices 3

  • Butter 1 tablespoon

  • Castor sugar (caster sugar) 1 cup

  • Salt to taste

  • Cinnamon powder ¼ teaspoon

  • Milk 250 millilitres

  • Fresh cream 375 millilitres

  • Egg yolks 3

  • Vanilla essence 1 teaspoon

  • brown sugar/jaggery ¼ cup

  • Cream cheese 1½ cups

Method

Step 1

Trim off the edges of bread slices and cut into small cubes.

Step 2

Heat butter in a small deep non-stick pan. Add bread cubes, mix and cook for 1 minute. Add ½ cup castor sugar, mix and cook till sugar melts.

Step 3

Add salt and cinnamon powder, mix and cook for 1 minute. Transfer onto a baking tray.

Step 4

Place the baking tray in the preheated oven and bake for 10-15 minutes.

Step 5

Heat milk in another small deep non-stick pan. Add cream, mix and bring the mixture to boil.

Step 6

Take yolks in a bowl. Add vanilla essence, brown sugar and remaining castor sugar and whisk well.

Step 7

Add ½ the milk-cream mixture and whisk well. Transfer the mixture into the remaining milk-cream mixture pan and turn on the heat. Whisk and cook till it thickens.

Step 8

Take cream cheese in a bowl and mix to get a smooth texture. Strain into the prepared milk-cream mixture, mix well and cooldown to room temperature.

Step 9

Blend the milk-cream mixture till smooth. Pour into an air-tight container, put baked bread cubes on top and cover. Freeze till set.

Step 10

Serve.
