Broccoli Bites This recipe is from FoodFood TV channel By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients broccoli, Bread crumbs Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Broccoli Bites 1 medium broccoli separated into florets and blanched 1/2 cup Bread crumbs 3 Eggs 1/4 cup grated carrots 4 tablespoons Parmesan cheese powder A large pinch of crushed peppercorns Salt to taste 1 teaspoon Italian seasoning A few fresh thyme sprigs 1/2 cup grated processed cheese a few a few leaves Fresh mint leaves 1/3 cup thick yogurt Juice of ½ lemon to taste Black pepper powder 1 teaspoon honey Method Preheat oven at 180°C. Place a silicon sheet on a baking tray. Roughly chop the broccoli florets into smaller pieces and place in a bowl. Add 2 eggs, breadcrumbs, carrots, Parmesan cheese powder, crushed peppercorns, salt, Italian seasoning and roughly chopped thyme and mix well. Add remaining egg and mix well. Add processed cheese and mix well. Dampen your palms with little water and divide the broccoli mixture into 8 equal portions and shape them into patties. Place patties on the baking tray and put the tray in preheated oven. Bake for 10-12 minutes. To make mint-yogurt dip, finely chop few mint leaves and place in a bowl. Add yogurt, lemon juice, salt, pepper powder and honey. Mix well. Remove patties from oven and place them on a serving dish. Garnish with mint leaves and serve hot with mint-yogurt dip.
