Ingredients list for Barbecued Mango Chicken

  • 1 Raw Mango peeled and cut into small pieces
  • 2 Boneless Chicken cut into pieces
  • 6-8 Garlic cloves
  • 2-3 Green chillies broken
  • 1/2 teaspoon Crushed black peppercorns
  • 1/2 teaspoon Sugar
  • 1 cup + for garnish Fresh coriander leaves finely chopped
  • Juice of 1 lemon
  • to taste Salt
  • 2-3 tablespoons Oil
  • 2 small for garnish Tomato flowers

Method

  1. To make the marinade, grind together raw mango, garlic, green chillies, crushed black peppercorns, sugar, coriander leaves and lemon juice with a little water and transfer into a bowl.
  2. Add chicken and salt and set aside for 30 minutes to marinate.
  3. Heat oil in a non stick pan. Skew the chicken pieces onto satay sticks and place the sticks in the pan.
  4. Cook rotating the sticks, so that the chicken gets cooked evenly all around.
  5. Place tomato flowers and coriander leaves on a serving plate.
  6. Arrange the chicken pieces on the plate. Cook the remaining marinade in the pan till it is slightly reduced.
  7. Spread it over the chicken and serve hot.
