Place peaches on it and grill till golden and grill marks appear on both sides. Transfer grilled peaches into a mortar reserving a few for garnishing. Let the peaches cool to room temperature, add lemon juice and brown sugar and muddle with a pestle. Place muddles peaches into a Boston shaker. Add lots of ice cubes, cover and shake well. Strain drink into individual Martini glasses, garnish with parsley sprigs and reserved grilled peaches. Serve chilled.
