Ingredients list for Barbecue Mocktail

  • 5-6 Peaches peeled, seeded and cut into halves
  • 1 tablespoon Lemon juice
  • 4 teaspoons brown sugar/jaggery
  • as required Ice cubes
  • for garnishing Parsley sprigs

Method

  1. Heat a non-stick grill pan. Place peaches on it and grill till golden and grill marks appear on both sides.
  2. Transfer grilled peaches into a mortar reserving a few for garnishing. Let the peaches cool to room temperature, add lemon juice and brown sugar and muddle with a pestle.
  3. Place muddles peaches into a Boston shaker. Add lots of ice cubes, cover and shake well.
  4. Strain drink into individual Martini glasses, garnish with parsley sprigs and reserved grilled peaches.
  5. Serve chilled.
