Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Baked Coconut Recipe

  • Scraped Fresh Coconut 1 1/2 cups + for garnishing

  • Coconut Cream 1/3 cup

  • Butter 100 grams

  • Sugar 1/2 cup

  • Eggs 1/2 cup

  • Condensed milk 1/3 cup

  • Lemon zest 1 teaspoon

  • Refined flour 3 tablespoons


Step 1

Preheat oven at 180ºC.

Step 2

Cream butter and sugar in a bowl till smooth and light.

Step 3

Add eggs and mix well. Add scraped coconut and mix well. Add condensed milk and mix well. Add coconut cream and mix again.

Step 4

Finely chop lemon zest and add. Mix well.

Step 5

Sift refined flour into the bowl and mix well.

Step 6

Pour batter into an ovenproof baking dish, put the dish in the preheated oven and bake for 25 minutes.

Step 7

Serve warm garnished with scraped coconut.
