Ingredients list for Baida Roti
- 9 Eggs
- 1 cup Chicken mince
- to taste Salt
- 1 tablespoon Oil
- 1/8 teaspoon Baking powder
- Oil 1 tablespoon + for cooking
- 1 medium Onion finely chopped
- 1 tablespoon Ginger-garlic paste
- 1 cup Refined flour (maida)
- 2 small Tomatoes finely chopped
- 2 Green chillies finely chopped
- a pinch Turmeric powder
- 1 1/2 teaspoons Red chilli powder
- 1/2 teaspoon Garam masala powder
- for garnishing A fresh coriander sprig
Method
- Mix together refined flour, salt, oil, baking powder and 1 egg in a bowl. Add ¼ cup water and knead into a soft dough.
- Divide the dough into 4 equal portions and roll out into 8 inch square rotis.
- Heat 1 tbsp oil in a non-stick pan. Add onion and sauté for 1 minute.
- Break remaining eggs into a bowl and beat well.
- Add ginger-garlic paste to the pan, mix and sauté for ½ minute. Add chicken mince, mix and cook for 2 minutes.
- Add tomatoes, green chillies, turmeric powder, red chilli powder and salt and mix well. Add ¾ cup water and mix well. Add garam masala powder, mix well, cover and cook on medium heat till chicken mince is cooked and mixture is dry.
- Heat a non-stick tawa. Place each roti on it and cook for 2 minutes on each side. Drizzle some oil on the sides and cook.
- Pour some beaten egg on top and spread, cook for 1 minute. Flip and cook till the egg is cooked.
- Place a portion of cooked chicken mince mixture in the centre, fold in the sides to make a square packet. Press and pour some more beaten egg on top. Flip, drizzle some more oil on the sides and cook, turning sides, till both sides turn golden and crisp.
- Cut into squares and serve hot garnished with coriander sprig.
