Ingredients for Aviyal Recipe

  • Mixed Vegetables cut into 2 inch pieces 1 medium

  • Scraped Coconut cut into 2 inch pieces 6-8

  • Potato cut into 2 inch pieces 1

  • Broad beans (sem ki phalli/papdi) cut into 2 inch pieces 4-6

  • Drumstick cut into 2 inch pieces 1

  • Raw banana cut into 2 inch pieces 1

  • White pumpkin cut into 2 inch pieces 200 grams

  • Yam boiled and peeled cut into 2 inch long pieces 100 grams

  • Green peas shelled 1/4 cup

  • Turmeric powder 1/4 teaspoon

  • Curry leaves 10-12

  • Scraped coconut 1/2 cup

  • Cumin seeds 11/2 teaspoons

  • Green chillies roughly chopped 4

  • Rice soaked 1 tablespoon

  • Yogurt 1 1/2 cups

  • Salt to taste

  • Coconut oil optional 2 tablespoons

Method

Step 1

Boil 1½ cups water in a deep non-stick pan. Add turmeric powder and curry leaves and let it come to a boil. Meanwhile grind coconut, cumin seeds, green chillies and raw rice with a little water to a fine paste.

Step 2

When the water comes to a boil add carrot, French beans, potato, broad beans, drumsticks and raw banana pieces. Stir, cover and cook for 2-3 minutes or till the vegetables are cooked and soft. Add white pumpkin, yam and green peas. Cover again and cook for 2-3 minutes more.

Step 3

Take yogurt in a bowl, add the ground paste and mix well. Add salt and mix. Add this mixture to the vegetables and mix well. Simmer for a while but do not boil. Drizzle coconut oil and serve hot.
