Contrary to popular belief a vegetarian diet gives you all the nutrients you will ever require to live a fit and healthy life. With low saturated fat and cholesterol, high fiber content and rich complex carbohydrates - veggie delights like greens, pulses and curries are your best bet at a meal which is nutritious and tasty!
Broad beans (sem ki phalli/papdi) cut into 2 inch pieces 4-6
Drumstick cut into 2 inch pieces 1
Raw banana cut into 2 inch pieces 1
White pumpkin cut into 2 inch pieces 200 grams
Yam boiled and peeled cut into 2 inch long pieces 100 grams
Green peas shelled 1/4 cup
Turmeric powder 1/4 teaspoon
Curry leaves 10-12
Scraped coconut 1/2 cup
Cumin seeds 11/2 teaspoons
Green chillies roughly chopped 4
Rice soaked 1 tablespoon
Yogurt 1 1/2 cups
Salt to taste
Coconut oil optional 2 tablespoons
Boil 1½ cups water in a deep non-stick pan. Add turmeric powder and curry leaves and let it come to a boil. Meanwhile grind coconut, cumin seeds, green chillies and raw rice with a little water to a fine paste.
When the water comes to a boil add carrot, French beans, potato, broad beans, drumsticks and raw banana pieces. Stir, cover and cook for 2-3 minutes or till the vegetables are cooked and soft. Add white pumpkin, yam and green peas. Cover again and cook for 2-3 minutes more.
Take yogurt in a bowl, add the ground paste and mix well. Add salt and mix. Add this mixture to the vegetables and mix well. Simmer for a while but do not boil. Drizzle coconut oil and serve hot.
