Arrabiata Sauce

Arrabbiata sauce, known in Italian as sugo all'arrabbiata, is a spicy sauce for pasta made from garlic, tomatoes, and dried red chili cooked in olive oil. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup canned tomato puree
  • 1/2 cup fresh tomato puree
  • 1 tablespooon olive oil + for drizzling 
  • 1 tablespoon chopped celery 
  • 1 teaspoon red chiili flakes
  •  Salt to taste
  • 1/2 teaspoon sugar
  • 6-8 fresh basil leaves  + to garnish 

Method

  1. Heat olive oil in a non-stick pan, add celery and sauté for a minute.
  2. Add canned tomato puree and fresh tomato puree and mix well. Add chilli flakes, salt
    and sugar, mix well and cook for 5-10 minutes or till the sauce reduces.
  3. Tear the basil leaves and add. Mix and cook for a minute.
  4. Transfer into a serving bowl, drizzle some olive oil, garnish with basil leaves and use
    as required.
