Aloo Matar

Chunks of aloo and matar are cooked in a simple but packed with flavour spice base. Great to eat along with garma garam roti’s or alongwith some hot dal-chawal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 4 medium potatoes, cut into 1 cm cubes and boiled
  • 1 1/4 cups shelled green peas, blanched
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 inch ginger piece, cut into juliennes
  • 1 green chilli, slit
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 1 1/2 teaspoons coriander powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves

Method

  1. Heat oil in a pan over medium heat. Add cumin seeds and when it crackles add ginger and green chillies, stir-fry for a minute. Add green peas, potatoes and stir fry till for 2 minutes.
  2. Add red chilli powder, turmeric powder, and coriander powder and stir-fry at slow heat till the spices blend well with the vegetables.
  3. Add salt and garam masala powder and finish with chopped coriander leaves.
