Ingredients list for Almond and Coffee Cookie
- ¼ cup Almonds chopped
- 1 tablespoon Instant coffee powder
- 380 grams Refined flour (maida)
- 350 grams Butter
- 180 grams Powdered sugar
- 1 teaspoon Vanilla essence
- 200 grams Rice flour
Method
- Preheat oven at 180ºC.
- Cream butter and castor sugar in a bowl using an electric beater till light.
- Add coffee powder and vanilla essence and beat again.
- Add refined flour, rice flour and almonds. Mix well and knead into a dough.
- Divide dough into equal portions and shape them into cookies.
- Place cookies on a baking tray, put tray in preheated oven and bake for 10-15 minutes.
- Remove from heat, cool and serve. You can also store them in an airtight container for about a week.
