Ingredients for Almond Rice Jelly Recipe

  • Almond powder 1/2 cup

  • Rice flour ¼ cup + 1 tablespoon

  • Oil for greasing

  • Gelatin 1 1/2 tablespoons

  • Castor sugar (caster sugar) 3/4 cup

  • Desiccated coconut 2 tablespoons

  • Almond essence a few drops


Step 1

Grease jelly moulds with oil.

Step 2

Put rice flour in a non-stick pan, add almond powder, gelatin, castor sugar and desiccated coconut and mix well.

Step 3

Add two and a quarter cups boiling water and bring the mixture to a boil. Cook further till it thickens.

Step 4

Add almond essence, mix well and pour into greased jelly moulds. Keep the moulds in the refrigerator for thirty minutes to set.

Step 5

Remove the jelly from the moulds and serve.
