Ingredients for Conkies Recipe

  • Pumpkin 1/2 cup

  • Coconut grated 1/2 cup

  • Sweet potato grated 1/2 cup

  • Sugar 1/2 cup

  • Nutmeg powder 1 teaspoon

  • All spice powder 1 teaspoon

  • Almond essence 1 teaspoon

  • Raisins 5 tablespoons

  • Refined flour (maida) 1 cup

  • Cornflour/ corn starch 1 cup

  • Salt 1 teaspoon

  • Melted butter 4 tablespoons

  • Milk 1 cup

  • Banana leaves cut into square pieces

Method

Step 1

Mix together coconut, pumpkin, sweet potato, sugar, nutmeg powder, allspice powder, almond essence, raisins, refined flour, cornflour and salt in a bowl. Add melted butter and milk and mix till smooth.

Step 2

Remove the stems of the banana leaves and roast them lightly on the gas flame.Heat Bisleri water in a steamer. Place a portion of the stuffing in the centre of the banana leaf. Fold the leaf to make a parcel.

Step 3

Similarly use up all stuffing. Place the parcels on a perforated plate, keep it in the steamer and steam for 30 minutes. Remove from the steamer and open the parcels. Transfer onto a serving plate and serve.
