Food with a twist

Shopping list

500 grams baby potatoes

1 packet tamarind paste

1 packet roasted peanuts

1 large brinjal

1 bunch fresh mint leaves

50 grams dried pomegranate seeds

1 packet boneless chicken breast

1 packet oats

1 bottle crushed black peppercorns

For faster preparation

Sauté baby potatoes in oil and keep them aside. Roast brinjals on gas flame, peel and chop finely. Sauté onion along with cumin seeds and cook till onions are soft for chutney. Cut chicken into small pieces and marinate with ginger-garlic paste, crushed black peppercorns, lemon juice and salt in a bowl and set aside for 20-25 minutes. 

How to go about it

Make the dressing by adding tamarind paste and the spices to the boiling water. Mix well and let it cook till thick. Add potatoes and mix well. Garnish with coriander and roasted peanuts and serve. Transfer roasted brinjal, onions and spices and lemon juice to blender jar and blend till smooth and serve. Dip chicken pieces in egg, coat with oats and shallow-fry till golden. Serve hot.
