Ingredients for Ultimate Christmas Cake Recipe

  • Fresh orange juice 1/2 cup

  • Raisins 1/4 cup

  • Black raisins 1/4 cup

  • Almonds chopped 1/4 cup

  • Cashews chopped 1/4 cup

  • Pistachios 1/4 cup

  • tutti-frutti 1/4 cup

  • Candied orange peel chopped 1/4 cup

  • Refined flour 1 cup

  • Cocoa powder 1 teaspoon

  • Baking powder 1 teaspoon

  • Baking soda 1/2 teaspoon

  • Condensed milk 1 cup

  • Butter 1 cup

  • Edible red colour 2 tablespoons

  • Beetroot juice 2 tablespoons

  • Vanilla essence 2 teaspoons

  • Vinegar 1 teaspoon

  • Baskin Robbins Red Velvet Ice-cream 3/4 cup

  • Cream cheese (Frosting) 1 cup

  • Butter (Frosting) 1/2 cup

  • Icing sugar (Frosting) 3/4 cup

  • Vanilla essence (Frosting) 1/2 teaspoon

Method

Step 1

Mix together orange juice, raisins, black raisins, almonds, cashews, pistachios, tutti-frutti and candied orange peels in a bowl. Set aside to soak for a few hours.

Step 2

In a bowl, sieve together refined flour, cocoa powder, baking powder and baking soda.

Step 3

In a separate bowl, mix together condensed milk and butter. Beat with electric beater till fluffy.

Step 4

Add edible food colour, beetroot juice and vanilla essence beat again till combined well.

Step 5

Add the sieved flour mixture and mix well. Add vinegar and mix well.

Step 6

Add Baskin Robins Red Velvet Ice-cream and mix well. Add soaked nuts and candied peels, mix well.

Step 7

Transfer the prepared batter to a greased baking tray.

Step 8

Bake in a pre-heated oven at 180˚C for 30-40 minutes.

Step 9

Mix together, cream cheese, butter, icing sugar and vanilla essence to prepare a smooth frosting.

Step 10

Spread the frosting on top of the cake, sprinkle with red velvet cake crumbs and serve
