Ingredients list for Tiger Bread - SK Khazana

  • Refined flour (maida) 2 cups + for dusting
  • 2 teaspoons Fresh yeast
  • Castor sugar (caster sugar) 1 teaspoon + 2 tablespoonss
  • 1/2 teaspoon Salt
  • 2 tablespoons Milk
  • 1 teaspoon Olive oil
  • Paste
  • 1/2 Fresh yeast
  • a pinch Castor sugar (caster sugar)
  • 2 tablespoons Rice flour
  • a pinch Salt
  • 1/2 teaspoon Olive oil
  • Butter Melted to brush

Method

  1. Take yeast in a small bowl, add 1 tsp castor sugar and 2 tbsps warm water, mix well and set aside for 5 minutes to activate.
  2. Sieve 2 cups refined flour in a planetary mixer bowl. Add remaining castor sugar and salt and whisk well.
  3. Make a well in the center of the flour, add the activated yeast, milk and 1 cup water. Start the mixer and knead into a soft dough.
  4. Stop the mixer and add olive oil and knead again till soft.
  5. Dust flour on the worktop, place the dough on it and knead slightly and spread into an oblong shape. Fold the dough in three fold. Dust flour on a greased baking tray and place the dough on it. Cover with a damp muslin cloth and set aside to prove for 20-25 minutes.
  6. Preheat the oven to 180˚C.
  7. To make the paste, add the yeast in a bowl, add castor sugar, rice flour, salt, olive oil and 2 tbsps water and mix well to make a thick paste.
  8. Apply this paste on the bread with your hand. Place the tray in the preheated oven and bake for 15-20 minutes.
  9. Remove and brush immediately with melted butter on all sides. Allow to cool down and transfer on a serving plate.
  10. Slice and serve as required.
