Ingredients list for Slimmers’ Salad In No Oil Dressing

  • 1 bunch Iceberg Lettuce
  • 2 Oranges
  • 2 Onion peeled
  • a few sprigs Fresh mint leaves
  • 10-12 Black peppercorns
  • 1 teaspoon Sea salt
  • 1 teaspoon Mustard seeds
  • 4 cloves Garlic
  • 3 tablespoons Lemon juice
  • 2 teaspoons Malt vinegar
  • 2 medium Apples cubed
  • 1/4 small Watermelon deseeded and cubed
  • 1 medium Carrot cubed
  • 1 medium Cucumber deseeded and cubed
  • 2 medium Tomatoes deseeded and cubed
  • 1 stalks Celery cubed
  • 1 medium Green capsicum cubed
  • 2 inch piece Spring onions

Method

  1. Wash lettuce, tear into bite-sized pieces and keep in ice-cold water to remain crisp.
  2. Peel oranges, separate segments and de-seed them. Cut them into half.
  3. Cut onion into quarters and separate the layers.
  4. Reserve some mint leaves for garnishing and chop the remaining.
  5. Crush peppercorns, sea salt, mustard seeds and garlic with lemon juice in a mortar with a pestle. Mix malt vinegar.
  6. In a bowl, mix all the fruits, vegetables and chopped mint leaves. Add the dressing and toss well.
  7. Serve the salad on a bed of crisp lettuce, garnished with reserved mint leaves.
