Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Raw Mango Rice Recipe

  • Raw mango peeled and grated 3 tablespoons

  • Cooked rice 3 cups

  • Green chillies 3

  • Oil 1 tablespoon

  • Mustard seeds 1 teaspoons

  • Split Bengal gram 1 tablespoon

  • Split black gram 1 tablespoon

  • Fresh coriander sprigs 4-5

  • Turmeric powder 1/4 teaspoon

  • Curry leaves 8-9

  • Salt to taste

  • Sugar 1 tablespoon

  • Raw mango slices for garnishing


Step 1

Chop green chillies.

Step 2

Heat oil in a non-stick pan. Add mustard seeds, Bengal gram and black gram and saute till the gram turn brown.

Step 3

Place cooked rice in another non-stick pan and heat.

Step 4

Chop coriander sprigs.

Step 5

Add turmeric powder to the pan with the mustard seeds and gram and toss. Add curry leaves, chopped green chillies, grated raw mango, salt and sugar. Mix well and add chopped coriander. Mix well.

Step 6

Add the mango mixture to the rice and mix well.

Step 7

Serve immediately garnished with raw mango slices.
