You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Chutney and Egg Patties Recipe

  • Eggs hard boiled 4

  • Potatoes medium boiled, peeled 4-5

  • Salt to taste

  • Semolina 1 tablespoon + ¼ cup

  • Eggs 2

  • Oil for deep-frying

  • coriander leaves for garnishing

  • Chutney

  • Scraped coconut 1 cup

  • Green chillies 5-6

  • Raw mango deseeded, chopped 1 medium

  • Cumin seeds roasted 1 teaspoon

  • Salt to taste

  • Castor sugar (caster sugar) ½ teaspoon

  • Garlic cloves 3-4

  • coriander sprig 5-6

  • Mint sprigs 4-5

  • Juice of ½ lemon

Method

Step 1

To prepare chutney, combine coconut, broken green chilies, raw mango, cumin seeds, salt, castor sugar and garlic cloves in a blender.

Step 2

Roughly chop coriander sprigs and mint sprigs, add to coconut mixture and blend to a smooth chutney.Transfer into a bowl. Add lemon juice and salt and mix well.

Step 3

Take potatoes in another bowl and mash lightly. Add salt and 1 tablespoon semolina and mix well.

Step 4

Halve the boiled eggs. Break eggs in another bowl, add salt and beat well.

Step 5

Spread¼ cup semolina on a plate.

Step 6

Heat sufficient oil in a pan.

Step 7

Divide potato mixture into equal portions and flatten them. Put some chutney in the center, place one halved egg over it, bring in the edges and seal completely covering the egg.

Step 8

Coat the egg patties with semolina and dip in beaten eggs.

Step 9

Deep-fry egg patties in hot oil till golden and crisp. Drain on absorbent paper.

Step 10

Serve hot garnished with coriander leaves.
