Brown Rice With Omelet

Ingredients list for Brown Rice With Omelet

  • 1 cup Brown rice
  • 2 blade Lemon grass
  • 1 inch piece Ginger

  1. Pick, wash and soak rice for one hour. Drain and keep aside. Clean, wash and chop lemon grass. Peel, wash and slice ginger and shallots. Peel, wash and slice cucumber Heat oil in a non-stick wok and sauté peanuts till golden.
  2. Drain onto an absorbent paper. Place rice in a thick bottomed pan. Add lemon grass, ginger, shallots and coconut milk. If the coconut milk is too thick add half a cup of water. Add salt and cook on high heat till it comes to a boil. Reduce heat, cover and cook till done.
  3. Stir in peanuts and cucumber slices. Beat eggs and add salt to taste. Heat a non-stick omelet pan with a few drops of oil and pour in eggs. Cook omelet and cut into strips. Remove rice into a serving dish and cover with a lattice of omelet strips. Serve hot.
