Ingredients list for Boiled Egg Bhurjee

  • 2 Eggs , boiled
  • 2 Eggs
  • 2 tablespoons Oil
  • 1 tablespoon Ginger , finely chopped
  • 2 Green chillies , finely chopped
  • 1 medium Onion , finely chopped
  • 2 small Tomatoes , finely chopped
  • to taste Salt
  • 1 teaspoon Coriander powder
  • 1 tsp + to sprinkle Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 tsp + to sprinkle Garam masala powder
  • 2 tablespoons Butter
  • 1 tbsp + for drizzling Red chilli sauce
  • 1 tablespoon Fresh coriander leaves , chopped
  • 2 tablespoons Green chutney
  • 1/4 cup Processed cheese , grated
  • to serve Pavs
  • to garnish Fresh mint leaves

Method

  1. Heat 1 tbsp oil in a non-stick pan, add ginger and green chillies and sauté till fragrant.
  2. Add onions, mix and sauté till translucent. Add tomatoes and mix. Add salt, mix and cook till the tomatoes turn soft and pulpy.
  3. Finely chop boiled eggs.
  4. Add coriander powder, red chilli powder, turmeric powder, garam masala powder and 1 tbsp butter to the pan and mix well.
  5. Add chopped eggs and mix well. Add red chilli sauce and mix. Add coriander leaves and mix well. Transfer into a bowl.
  6. Heat remaining oil in the same pan. Break eggs in it and cook a sunny side up. Transfer the sunny side on top of the prepared bhurji.
  7. Mix green chutney, remaining butter and cheese well and put on top of the sunny side egg.
  8. Toast pavs till lightly browned on both sides.
  9. Sprinkle red chilli powder, garam masala powder and mint leaves on bhurji, drizzle red chilli sauce on top and serve hot with toasted pavs.
