If the country is governed by a Gujarati, then why not we bring the state's influence into Masterchef India?" says chef Sanjeev Kapoor, when asked about the reality show going all vegetarian. "During previous outings here, I had people come up to me saying they want to participate in the show, but they only know how to cook vegetarian food. So we came up with this concept. The show is not just for vegetarians though, the non-vegetarians are invited, too," added Kapoor.

What made you The Sanjeev Kapoor? (Laughs) "The unique thing about me? It is the uniqueness of my style itself. On a serious note, I think my ability to focus on skills irrespective of what the world is doing is what I appreciate in self. I am not easily influenced by current trends," he said. "I have a show and a food channel, but I am never affected by competition. I do my own thing," said the chef, who has been host of the show for two years now.

So, what would he advise aspiring chefs of today? "Today, there are lot more opportunities and exposure. There are shows like Masterchef, and online platforms where people can learn and flaunt their culinary skills. People who really enjoy cooking and have the passion should enter this field. My advice would be to get into the world of food. It is like, to win you have to get in," said Kapoor.

Food has evolved a lot. What does a veteran chef like him have to say about the evolution? "It is not that if you cook the same food in the same manner through the years, you can maintain authenticity. The only thing that has changed is people use less oil and are finding healthier options," said Kapoor. "Even though the food has evolved, some things never change. For example, the importance of Indian spices. You cannot add oregano in paneer butter masala. So basically, the food has been the same but we have healthier options for it," he added.

Having a Gujarati for wife, why wouldn't he love the cuisine? "My wife is a Gujarati, so I like all dishes she prepares. I love khaandvi and my mom-in-law's undhiyu," he added. "Gujarat has been the flavour of the nation for a while now, and I hope the next masterchef is a Gujarati," signed off Kapoor.
