In conversation with Chef Sanjeev Kapoor


It's not every day that you get a chance to meet celebrated Chef Sanjeev Kapoor, whose recipes you've tried to replicate in the kitchen for years. Ask him his favourite chef or who inspires him and he replies, Anyone or everyone who cooks with love inspires me. I have many favourite professional chefs, but even the guy making dosas at a local darshini inspires me.

Better known for his popular cooking show Khana Khazaana on TV, do cameras bother his cooking, I cook as if I am cooking in my own kitchen. The cameramen do their job and I do mine, he quips.

Kapoor believes that one should keep learning whether it?s cooking techniques or new technologies. I launched my website in 1996, even before many national dailies launched their websites, he says. He also has a YouTube channel Sanjeev Kapoor Khazana. I will proudly say that our channel has the highest subscriptions that any other Indian celebrity?s channel.

Ahead of the launch of The Yellow Chilli and HongKong both by Chef Kapoor at Church Street, Bangalore; we spoke to the chef about his favourites and more. Here are excerpts from the interview.

What would be your ideal date meal?
Anything that my partner would cook for me with love.

Your kitchen superstition.
None at all. Some people believe that luck plays a big role in life, I believe, passion does. Cooking for me is passion.

Your favorite dish from your restaurants.
Lalla Mussa Dal. I can bet it's the best dal you'll ever have in the world.

TV, restaurant business or kitchen ? what do you enjoy the most?
All three as I end-up cooking everywhere.

What?s the secret behind your fitness?
Moderation. Either you eat a lot and compensate by exercising a lot or you eat less and do a little work out. But yes the foodie in me often forgets this. On my way back to Delhi recently, I hogged on half kilogram of jalebis alone at a roadside dhaba.

Your favourite restaurant in Bangalore.
Fishland restaurant in Majestic. They serve a Green Chilli Chicken, which I have not tasted ever before. It's very hot but delectable.

Your comfort food.
Anything that's cooked at home with love. But not many people invite me over and say, Aapko hum kya khila sakte hain?

One ingredient you would never touch.
Every ingredient has its distinct taste and texture, there?s nothing I wouldn't touch.
