Ingredients for Zucchini Alla Scapece Recipe

  • Zucchini cut into round slices 2 medium

  • Olive oil shallow fry

  • Garlic chopped 2 large

  • Mint leaves chopped 1 tablespoon

  • Salt to taste

  • Black pepper powder 1/4 teaspoon

  • Balsamic vinegar 1/4 cup

  • Mint leaves sprigs

Method

Step 1

Heat the olive oil in a pan and shallow-fry the zucchini; drain on absorbent paper and set aside to cool.

Step 2

Arrange the zucchini rounds in a serving platter and sprinkle with garlic, mint, salt and pepper powder. Drizzle the balsamic vinegar over the salad and leave to marinate for at least half an hour.

Step 3

Serve at room temperature or chilled, garnished with a sprig of mint.
