Ingredients list for Turai aur Tamatar ki Sabzi

  • 3 medium Ridge gourds (turai) peeled
  • 3 medium Tomatoes
  • 2 tablespoons Mustard oil
  • 1/4 teaspoon Asafoetida
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Garam masala powder
  • to taste Salt
  • 1 tablespoons Tamarind pulp
  • 1 tablespoon Sugar
  • 3-4 Fresh coriander leaf sprigs
  • 2-3 tablespoons Ganthia

Method

  1. Cut ridge gourds into small pieces.
  2. Heat mustard oil in a non-stick wok, add asafoetida and cumin seeds and saute for 1 minute.
  3. Add ridge gourds and mix. Saute for 1-2 minutes. Add red chilli powder, turmeric powder, garam masala powder and salt and mix well.
  4. Roughly chop tomatoes, grind them in a mixer and add to the wok. Mix well and cook for 6-8 minutes.
  5. Add tamarind pulp and sugar and mix well. Cook for 2 minutes.
  6. Chop coriander leaves and add to the wok and mix well.
  7. Transfer into a serving bowl and serve hot garnished with ganthia.
