By Sanjeev Kapoor 17 Feb 2016 in Recipes Course New Update Main Ingredients Tomatoes, Coconut Cuisine Kerala Course Soups Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Tomato And Coconut Soup 6 medium Tomatoes chopped 1/2 cup Coconut scraped 2 tablespoons Oil 7-8 cloves Garlic chopped 2 medium Onions chopped 1 1/2 inch piece Ginger grated to taste Salt to taste White pepper powder 4 Bay leaves 7 cup Vegetable stock 2 tablespoons Fresh cream Method Heat oil and sauté garlic and onions for a few seconds. Add scraped coconut and stir fry for a minute. Add tomatoes and ginger. Stir in vegetable stock, salt, white pepper powder and bay leaves. Allow to simmer for fifteen-twenty minutes till the tomatoes are cooked and tender. Remove from heat and allow to cool. Blend to make a puree and strain. Place on heat and bring to a boil. Stir in cream and serve immediately.
