Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato, Coconut mix Chutney Recipe

  • Tomato diced 2 medium

  • Coconut grated 1/4 cup

  • Oil 1 teaspoon

  • Onion diced 1 medium

  • Garlic crushed 2 cloves

  • Whole dry red chillies 2

  • Fresh coriander leaves chopped 1/3 cup

  • Salt to taste

Method

Step 1

Heat oil in a non stick pan. Add garlic and whole red chillies, saute well for half a minute.

Step 2

Add onions and saute till soft. Add tomatoes and salt. Mix well and cook for five minutes till tomatoes are soft.

Step 3

Add coconut and coriander leaves. Mix well. Saute for five minutes. Remove from heat. Allow it to cool and blend in the blender till smooth.
