Ingredients list for Tender Pumpkin Paal Kootu

  • 500 grams White Pumpkin
  • Milk
  • 4 Green chillies
  • 1 cup Milk
  • 2 teaspoons Sugar
  • 2 tablespoons Rice flour
  • 10-12 Curry leaves
  • to taste Salt
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Split black gram skinless (dhuli urad dal)
  • 4 tablespoons Refined oil

  1. Peel, deseed and cut the pumpkin into medium size fingers. Wash and slit the green chillies. Boil milk with ½-cup water.
  2. Add the sugar and rice flour dissolved in 2 tablespoons of water. Add slit chillies and the pumpkin and cook it till it is just done. Add salt to taste.
  3. Wash and add the curry leaves and simmer till it thickens well. Heat oil and temper with mustard seeds and urad dal.
  4. Add to the pumpkin mixture and cover immediately to trap the flavours.
