Ingredients list for Sweetcorn Crabmeat Soup

  • 2 1/2 cups Sweet corn (cream style)
  • 3 tablespoons Crab meat cooked
  • 3 cups Chicken stock
  • 2 tablespoons Cornflour/ corn starch
  • to taste Salt
  • 1/2 teaspoon White pepper powder
  • 1 tablespoon Sugar
  • 2 Egg whites
  • for garnish Spring onion greens chopped

Method

  1. Boil chicken stock in a non stick pan. Mix cornstarch with ¼ cup water till smooth. Mix salt, pepper powder, ½ tbsp sugar and little water in another bowl.
  2. Add cream style corn to the boiling stock and mix well.Add sugar-pepper mixture and cornstarch mixture.
  3. Mix well and cook for 2-3 minutes.
  4. Adjust salt and add remaining sugar. Mix well and cook till comes to a boil.Beat egg whites and add. Mix well.
  5. Add crabmeat and mix again. Cook for 1 minute.
  6. Serve piping hot garnished with chopped spring onion greens.
