Ingredients list for Strawberry Shrikhand Fruit Tarts

  • 8-10 Strawberries
  • 12 Tart Shells
  • 1 cup Sugar
  • 1 medium Apple peeled and cut into small cubes
  • 1 medium Pear peeled and cut into cubes
  • 1/2 teaspoon Lemon rind grated
  • 7-8 drops Lemon juice
  • 1/2 cup Grapes halved
  • 1 Ripe banana peeled and sliced
  • 1 cup Hung yogurt
  • For garnishing
  • Few strawberry slices

Method

  1. Roughly chop strawberries and grind to a purée.
  2. Heat a non-stick pan, add the purée and ½ cup sugar and cook for 5-6 minutes or till the mixture thickens.
  3. Transfer half of this mixture into a bowl, cool and chill in the refrigerator.
  4. Add apple and pear to the mixture remaining in the pan and cook for 4-5 minutes. Add lemon rind, lemon juice and the remaining sugar and cook till the mixture becomes dry. Switch off the heat.
  5. Add grapes and banana and mix well. Transfer the mixture into another bowl, cool and chill in the refrigerator.
  6. To make shrikhand, mix together hung curd and chilled strawberry purée. Transfer this shrikhand into a piping bag fitted with a star nozzle.
  7. Arrange the tart shells on a serving plate. Fill the tarts with the fruit mixture. Pipe the shrikhand over the fruits. Garnish with strawberry slices and serve.
