Ingredients for Strawberry Bread Pudding Recipe

  • White bread slices 8

  • Strawberry compote for spreading

  • Butter for greasing and spreading

  • Sugar ½ cup

  • Eggs 4

  • Vanilla essence 1 teaspoon

  • Milk 2 cups

  • Icing sugar for dusting

Method

Step 1

Preheat oven to 180º C. Grease a large oval glass baking dish with some butter.

Step 2

Discard the edges of the bread slices.

Step 3

Spread some butter on 4 slices and some strawberry compote on the remaining slices. Cover each buttered slice with the remaining slices, strawberry side down.

Step 4

Cut each sandwich into 4 equal pieces.

Step 5

To prepare custard, combine sugar, eggs and vanilla essence in a bowl and whisk with an electric beater. Add milk gradually and whisk well.

Step 6

Line the greased baking dish with bread pieces and pour custard mixture on top.

Step 7

Place the baking dish on a baking tray. Place the tray in the preheated oven and bake for 40-50 minutes or till the custard is set. Remove from oven and cool.

Step 8

Dust with icing sugar and serve immediately.
