Stir Fried Garlic Chicken with Coriander

Ingredients list for Stir Fried Garlic Chicken with Coriander

  • 400 grams Boneless chicken cut into cubes
  • 3 tablespoons Garlic chopped
  • ¼ small bunch Fresh coriander leaves with stems
  • to taste Salt
  • to taste White pepper powder
  • 1 tablespoon Dark soy sauce
  • 1 Egg
  • 2 tablespoons Cornflour/ corn starch
  • to deep fry Oil 1 tablespoon +
  • 3 Green chillies
  • 3 tablespoon Fish sauce
  • 1½ teaspoons Sugar
  • Lemon juice of ½ lemon
  • for garnishing Fresh coriander sprigs

Method

  1. Take chicken cubes in a bowl. Add salt, 1 tablespoon garlic, pepper powder, ¼ tablespoon soy sauce and egg and mix well. Add cornflour and mix well. Set aside to marinate for 10-15 minutes.
  2. Heat sufficient oil in a wok. Deep-fry marinated chicken cubes till chicken is fully cooked and golden. Drain on absorbent paper.
  3. Finely chop coriander stems. Slice green chillies diagonally.
  4. Heat 1 tablespoon oil in a non-stick wok. Add remaining garlic and green chillies and sauté on high heat till garlic turns light brown.
  5. Add coriander stems, mix and sauté for 10 seconds. Add remaining soy sauce and fish sauce and toss to mix.
  6. Add sugar and mix well. Add fried chicken and toss well.
  7. Finely chop coriander leaves.
  8. Add lemon juice to the pan and toss. Add coriander leaves and toss again. Switch off heat.
  9. Serve hot garnished with coriander sprig.
