Ingredients list for Spinach Potato soup

  • 100 grams Spinach blanched
  • 1/2 cup Potatoes
  • 1 tablespoon Butter
  • 1/2 teaspoon Ginger-garlic paste
  • 2 cups Coconut milk
  • 1 cup Vegetable stock
  • 1 large Potato, boiled and mashed
  • 3/4 teaspoon Black pepper powder
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 4 teaspoons Fresh cream

Method

  1. Blend together spinach leaves and green peas.
  2. Heat butter in a non stick pan and add ginger garlic paste and saute for a minute.
    Add coconut milk, vegetable stock and let it boil for five minutes.
  3. Add potatoes, spinach paste, black pepper powder, salt, lemon juice and fresh cream and let it simmer on a low flame for two minutes.
  4. Remove from flame and serve hot.
