Spinach Parmesan Muffin A savoury muffin made with spinach and parmesan cheese. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 13 Apr 2016 in Recipes Course New Update Advertisment Main Ingredients Spinach, Parmesan cheese powder Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 31-40 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Spinach Parmesan Muffin 100 grams Spinach blanched and chopped 1/4 cup Parmesan cheese powder 2 cups Refined flour (maida) 1/2 teaspoon Salt 1 tablespoon Baking powder 1 teaspoon Castor sugar (caster sugar) 1 Egg + 2 tablespoons Milk 1 cup 1/2 cup Oil Method Preheat oven to 180º C. Line a silicon muffin tray with muffin cases. Cream together egg, olive oil and milk in a bowl till light. Sieve together flour, baking powder and salt into the egg mixture. Fold in well. Add spinach, ⅔ of the parmesan cheese powder and castor sugar and mix well. Spoon the mixture into the moulds till ¾ full. Place the tray on a baking tray and place it in the preheated oven and bake for 20-25 minutes. Remove from oven, demould and top with the remaining parmesan cheese powder.
