Spicy Paneer Rolls

Crisp on the outside and spicy, soft, cheesy and full of flavour on the inside – these Spicy Paneer Rolls are a great snack to have with evening chai. Serve them garmagaram with some ketchup on the side and everybody is going to be a fan of your cooking. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Spicy Paneer Rolls

  • 1 cup Paneer (cottage cheese) grated
  • 1 medium Potato boiled, peeled and grated
  • 2-3 Green chillies finely chopped
  • 1 teaspoon Red chilli powder
  • 8 White bread slices
  • ½ cup Bread crumbs
  • 3 tablespoons Processed cheese grated
  • 2 tablespoons Fresh coriander leaves chopped
  • ½ teaspoon Chaat masala
  • to taste Salt
  • to deep fry Oil

Method

  1. Take cottage cheese in a bowl. Add potato, breadcrumbs, cheese, coriander leaves, red chilli powder, chaat masala, green chillies and salt and mix well.
  2. Heat sufficient oil in a kadai.
  3. Discard edges of bread slices and flatten them with a rolling pin. Put the slices on a worktop, place a portion of cottage cheese mixture on one side, roll tightly, trim edges, cut into two parts and secure each with a toothpick.
  4. Deep-fry rolls in hot oil till golden and crisp. Drain on absorbent paper.
  5. Serve hot with tomato ketchup.
