Ingredients list for Soyabean and Vegetable Star Crisps

  • 1/2 cup Soyabean
  • 2 small Vegetables boiled peeled and grated
  • 1/4 cup Grated cabbage
  • 1/4 cup Grated carrot
  • 1/4 cup Green peas
  • 1/2 cup Refined flour
  • 1/2 cup+ for dusting Whole wheat flour
  • 1 medium Onion chopped
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Dried mango powder
  • 1 teaspoon Roasted cumin powder
  • 2 teaspoons Green chilli paste
  • to taste Salt
  • for cooking Oil
  • for garnishing Fresh coriander sprigs
  • for serving Dollops of butter
  • Raita
  • 8-10 Fresh coriander sprigs
  • 1 small Onion chopped
  • 1 small Tomato chopped
  • to taste Salt
  • 1 1/2 tablespoons Yogurt

  1. Combine soyabean flour, refined flour, whole wheat flour, potatoes, onion, cabbage, carrot, green peas, turmeric powder, dried mango powder, cumin powder, green chilli paste and salt in a bowl. Add sufficient water and knead into a soft dough and set aside to rest for 5-10 minutes.
  2. Dust the worktop with some wheat flour. Roll out the dough into a large thin sheet. Cut out star shapes using a star-shaped cookie cutter.
  3. Heat little oil on a non-stick tawa. Place the star shaped cut outs on it and fry till crisp and golden from both the sides.
  4. To make raita, chop coriander sprigs and put in a bowl. Add onion, tomato, salt and yogurt and mix well.
  5. Place the star crisps on a serving plate, garnish with coriander sprigs and serve with raita and dollops of butter.
