Ingredients list for Soya Matar Bhurji

  • 1 cup Soya Nuggets soaked and drained
  • 1 cup Green Peas
  • 4 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Ginger finely chopped
  • 2 Green chillies finely chopped
  • 2 medium Onion finely chopped
  • 1 tablespoon Garlic finely chopped
  • 1 small Green capsicum finely chopped
  • 6 medium Tomato finely chopped
  • 1½ teaspoon Red chilli powder
  • 1½ tablespoon Coriander powder
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Cumin powder roasted
  • to taste Salt
  • 6-8 Fresh coriander sprigs
  • for garnishing Tomato flowers
  • for garnishing Fresh red chilli flower
  • for garnishing Thin strips of ginger

Method

  1. Heat oil in a non-stick pan, add cumin seeds and when they begin to change colour, add ginger, green chillies and onions andsauté till translucent. Add garlic and sauté further for 2 minutes. Add capsicum and tomatoes and mix well. Cook for 8-10 minutes.
  2. Add red chilli powder, coriander powder, turmeric powder, cumin powder and salt.Mix and cook for 3-4 minutes. Add soya nuggetsand green peas and mix well. Cook till soya nuggetsand green peas are done.
  3. Finely chop coriander and add to the pan and mix well.
  4. Transfer the bhurjiinto a serving bowl, garnish with tomato flower, red chilli flower and ginger strips and serve immediately.
