Ingredients list for Smoked Chicken with Citrus Salad

  • 4 Boneless chicken breasts
  • 2 medium Oranges segments separated
  • 3-4 Pomelo segments sliced
  • 2 tablespoons Garlic chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 teaspoons Red chilli flakes
  • ¼ cup + as required Olive oil 2 tablespoons +
  • 1 teaspoon Mustard paste
  • 1 tablespoon Maple syrup
  • 1 tablespoon Lemon juice
  • 18-20 fresh arugula leaves
  • 1 tablespoon Pine nuts(chilgoza)
  • 1-2 tablespoons Feta cheese
  • for garnishing Fresh coriander sprigs

Method

  1. Heat a piece of coal on direct flame and place in a small steel bowl.
  2. Take chicken breasts in a bowl. Add garlic, salt, crushed peppercorns, chilli flakes, 1 tablespoon olive oil and mustard paste and mix well.
  3. Place the steel bowl on one side of the bowl andpour1 tablespoon olive oil on the coal to create smoke. Cover the entire bowl immediately with aluminum foil and keep for 3-4 minutes.
  4. To prepare dressing, take maple syrup vinaigrette, lemon juice, salt and crushed peppercorns in another bowl and whisk. Add ¼ cup olive oil gradually and whisk well.
  5. Heat an electric griller and grease with some olive oil. Place the marinated chicken breasts on it and grill from all sides basting with some olive oil till golden and cooked. Transfer onto a plate.
  6. Place few arugula leaves on one side of a serving platter. Place few pomelo slices, orange segments, pine nuts and feta cheese on top.
  7. Place grilled chicken breasts on the other side. Drizzle some dressing, sprinkle some crushed peppercorns and sprinkle a few coriander sprigs on top of the fruit mixture.
  8. Serve immediately.
