Ingredients

  • Eggs 4 large

  • Mushrooms sliced 3 large

  • Red capsicum cubed 1/2 medium

  • Cream 1/4 cup

  • Salt to taste

  • Butter 1 tablespoon

  • Onions chopped 1 medium

  • Green Californian chillies sliced 3 large

  • Cheddar cheese grated 1/4 cup

  • Monterey Jack cheese grated 1/4 cup

Method

Step 1

Break eggs in a large bowl and beat lightly. Stir in fresh cream and salt to taste.

Step 2

Melt butter in a large frying pan. Cook onions, mushrooms and red capsicum until tender. Add chillies and egg mixture. Cook, stirring occasionally until eggs begin to set.

Step 3

Sprinkle both the cheeses over the eggs. Cover and cook until eggs are set and fully cooked.
