The Marwari vegetarian food again comes in two varieties i.e. the food eaten by the common man that includes use of various spices and herbs and the food of the Marwari Jains that is prepared without using onions, garlic or for that matter any ingredient growing under the soil except for ginger and groundnuts.
Marwari vegetarian cooking has its own unique flavour where the simplest and the most basic of ingredients go into the preparation of most of the dishes. There are some specific reasons for the use of some specific ingredients. The harsh climate plus the non-availability of a lot of ingredients have shaped the traditional cuisine.

Ingredients for Red Pumpkin Ki Launjee Recipe

  • Red pumpkin (bhopla/kaddu) 250 grams

  • Milk 2 cups

  • Sugar 1 cup

  • Ghee 1 teaspoon

  • Pistachios 12-15

  • Melon seeds (magaz) 1 tablespoon

  • Raisins 1 tablespoon

Method

Step 1

Cook sugar with half cup water in a non-stick pan to make a syrup. Heat milk in another pan.

Step 2

Peel the pumpkin and cut into even sized fingers. Pierce the pieces lightly with a fork and put them in the sugar syrup and cook.

Step 3

Remove the cream that forms over the milk into a plate and continue to cook the milk for more cream. As the cream forms, remove it and place in the plate.

Step 4

Heat ghee in another pan. Chop pistachios coarsely and add to pan. Add melon seeds and sauté lightly. Add raisins, sauté lightly and transfer into a bowl.

Step 5

As soon as the pumpkin pieces are well cooked and soft, remove from syrup and arrange them in a serving bowl.

Step 6

Drizzle fresh cream over them and sprinkle the sautéed nuts. Serve hot or cold.
