Ingredients list for Quinoa Salad

  • 1 cup Quinoa
  • 1 medium Tomato chopped
  • 1 medium Green bell pepper chopped
  • 1 medium Cucumber peeled and roughly chopped
  • 1 tablespoon Fresh coriander leaves chopped
  • 1 teaspoon Extra-virgin olive oil
  • 2 tablespoons Lemon juice
  • to taste Salt
  • to taste Black pepper powder
  • for garnishing Fresh coriander sprigs

Method

  1. Rinse quinoa in water, strain and boil in 1½ cups water for 5-7 minutes. Remove from heat, add 1 teaspoon olive oil and set aside.
  2. Combine quinoa, tomato, bell pepper, cucumber, chopped coriander in a bowl. Mix well.
  3. Combine 2 tablespoons olive oil, lemon juice, salt and black pepper powder in another bowl. Mix well and add to salad. Toss to mix.
  4. Garnish with coriander sprig and serve immediately.
