Ingredients list for Quick Canapes

  • 4 slices Brown Bread Slices
  • 4 Mayonnaise
  • 4 Cheese crackers
  • 4 Canape cups
  • 8-12 Asparagus heads
  • as required Butter
  • 1/2 cup Mayonnaise
  • 2 Eggs boiled and sliced
  • 2 tablespoons Tomato ketchup
  • a few sprigs Fresh parsley
  • 1 teaspoon Red chilli powder
  • 1/2 small Red bell pepper deseeded and cut into 1 cm triangles
  • 2 Chicken sausages sliced
  • 1/4 teaspoon Chives
  • 1/4 cup American corn kernels
  • 1/2 small Cucumber finely chopped
  • 1/2 small Raw mango finely chopped
  • 1/2 small Onion finely chopped
  • 1 small Tomato finely chopped
  • to taste Salt
  • 1/4 teaspoon Black pepper powder
  • 1/2 small Yellow bell pepper deseeded and cut into 1 cm triangles
  • 1/2 small Green capsicum deseeded and cut into 1 cm triangles
  • 1/4 cup Cheese grated
  • 1 tablespoon Lemon juice
  • a few sprigs Fresh mint leaves

  1. Trim, wash and blanch asparagus heads. Drain and keep aside. Cut brown bread slices in triangles or roundels. Apply a little butter and toast them on a hot tawa. . Apply a little butter or mayonnaise on the bread pieces. Arrange boiled egg slices, one on each piece.
  2. Over the egg place a drop of tomato ketchup or butter. Place a sprig of parsley and serve. To make canapés with biscuits or cream crackers, apply butter or mayonnaise on each. Cut the asparagus heads to the size of the base and place over them. Pipe a dollop of butter and sprinkle a little red chilli powder. Garnish with red capsicum triangle. Apply butter on a cracker. Place a piece of asparagus and a slice of sausage. Pipe butter with red chilli powder and garnish with chives.
  3. Over that place a dollop of butter and a piece of red capsicum. For canapé cups mix together American corn, chopped cucumber, chopped raw mango, chopped onion, chopped tomato, salt and pepper powder, coloured bell peppers, capsicum, grated cheese well. Add tomato ketchup and lemon juice. Put into canapé cups and garnish with fresh mint sprigs. Similarly different canapés can be made.
