Ingredients list for Poha With Mixed Sprouts

  • 1 cup Pressed Rice
  • 1/2 cup Mixed Sprouts boiled for 5 minutes
  • 1 medium Onion
  • 1 1/2 tablespoons Oil
  • 1/4 teaspoon Mustard seeds
  • 10-12 Curry leaves
  • 1/4 teaspoon Turmeric powder
  • 1 medium Tomato seeded and diced
  • to taste Salt
  • 1 Lemon juice
  • 1 tablespoon Roasted peanuts

Method

  1. Place the poha in a colander and wash under running water till soft.
  2. Leave to drain for 10-15 minutes.
  3. Chop onion.
  4. Heat oil in a non-stick pan.
  5. Add mustard seeds and when they splutter, add curry leaves and onion and sauté till onion is light brown.
  6. Add turmeric powder and mix well.
  7. Add tomato and mix again.
  8. Add sprouts and poha and toss to mix.
  9. Add salt and lemon juice and mix well.
  10. Cook for a minute.
  11. Add peanuts and mix again.
  12. Serve hot.
